I think the current Physis library (integrated library plus VCE available here) is huge, and certainly more than enough to build just about any sonic aesthetic.
Of course, it must also be said that some VCE aren't that great: it has also happened to me to hear some wonderfully realistic VCE in a specific area of the keyboard, and then continue in a completely sterile and synthetic way. The only explanation I have come up with is that perhaps they were specific VCE to be integrated into hybrid pipe-digital organs, where then a part of the register sounds digital and a part continues with pipes. Maybe the built-in part that continues with the pipes was simply overlooked in the VCE because it wasn't meant to play. Many VCE are probably specific to the Laurel system, which is basically a box that has the same Physis hardware, and is meant to be integrated into pipe organs.
Some VCE were probably created also when the technology was just born and weren't that great, and just left there.
Most of the stops in the library however are really very nice and very realistic, and with these you can program really very beautiful styles.
